This Minestrone is not your typical minestrone – in that it has been muscled up for my carnivore menfolk.

Today we had a fantastic day. The weather held around 0 degrees, and we headed southeast about an hour to Birch Lake. I have to say, I don’t know that I would make a good Ice Road Trucker – it’s a little unnerving driving on a frozen lake…though it was beautiful!
This stew is the perfect dish to keep your tummy warm and filled on a cold Alaskan (or anywhere) winter evening.

I’m going to share with you a simple recipe that I made for the first night on our fishing trip to beautiful Valdez, Alaska. Can you imagine fishing with this kind of a view?

The other day, the kiddos and I went for a hike at the Angel Rocks Trail, about an hour from Fairbanks. On the way there, we saw some moose.
