Simple broiled halibut with a creamy topping.

This recipe is one that Mr. Smith started cooking after his first fishing trip down on the coast of Alaska. He brought back a cooler filled with fresh fish, including a whole bunch of halibut. This is one of the ways he likes to cook it.

But first, just a little trivia that I thought I would share with you:
Alaska is 663,267 square miles.
That is 2.469 times the size of Texas.
That is 4.058 times the size of California.

That kind of puts things in perspective.

Once known as “Seward’s Folly,” the entire land mass of Alaska was purchased for a whopping 5.9 cents per square mile.

The main “harvest” that comes out of Alaska? Seafood!

With that in mind, I am going to share this simple halibut recipe that my husband makes.

To begin, turn your oven on to the low broil setting.

Trim the skin from your halibut (if you have any) and lightly salt and pepper the fillet.

Place the fillet in a broil-safe dish – I simply used a small iron skillet.

Place it in your oven and broil it for 8-10 minutes, or until it just begins to flake apart when pulled with a fork. The time will be determined by the size and thickness of your fillet.

While it is broiling, combine in a dish 1/4 cup Parmesan cheese, 2 tablespoons soft butter, a tablespoon and a half of mayonnaise, 2 teaspoons of lemon juice, and a couple dashes of your favorite hot sauce.

When the fillet has reached the doneness above, spread the mixture over the top of the fish.

Place the dish back under the broiler for about 2 more minutes, until the topping is melted together and just beginning to get a few golden patches. Sprinkle with some parsley.

Ingredients
  

  • 1 halibut fillet
  • salt & pepper
  • 1/4 cup Parmesan cheese
  • 2 Tb soft butter
  • 1 1/2 Tb mayonnaise
  • 2 teaspoon lemon juice
  • a couple dashes of your favorite hot sauce
  • 1/2 teaspoon parsley

  1. I spent a summer in Alaska many years ago and fell in love with halibut and king crab legs. I must’ve tried eating my body weight in both daily because they’re so delicious! Love the recipe.
