The school year is getting ready to start up here in our house, and if your home is anything like ours, it is about to get very busy! I fast and simple meal for the weeknight is definitely called for, and this is about as simple as it gets.
Right now I am getting lesson plans finalized, getting a school calendar mostly finalized, and working on doing some fixing up of our new classroom. If you remember, I posted about having a "Mom Cave" in our new home. Well that is true, but the other side of the room will be our school area. And because we now have a classroom, for the first time since moving from North Carolina, I now need another table! BUT because when we PCS, we will still have household weight limitations, I don’t want to spend a bunch of money on something I will need to get rid of next year….so I am building one out of pallets! I will share that with you later this week.
Right now, I am going to share with you another simple meal from Katie Workman’s The Mom 100 Cookbook.
To begin, shred some cheeses and prep ingredients that you may want in your quesadillas. I sautéed some green peppers, and shredded some cooked chicken, seasoning it with my homemade taco seasoning. I set up dishes with black olives, black beans, salsa, sour cream and guacamole as well.
Turn the broiler on in your oven, place a couple flour tortillas on a baking sheet, and broil them for just a couple minutes or until they begin to get just a little golden.
Turn the hot tortilla over, and sprinkle on some cheese, and anything else you might like. I set up this "quesadilla station" and everyone can make theirs the way they want.
Top it with another tortilla, and then pop it back under the broiler for a couple more minutes, again until it is just starting to get golden.
Slide them onto a cutting board, and cut them into wedges.
Then enjoy them with whatever toppings you like!
