I simply love these muffins. First of all, I adore pumpkin. These pumpkin muffins are filled with extra goodies – with cranberries, pecans and oats – making them perfect for breakfast in our house.

To begin, preheat your oven to 350 degrees. This recipe makes aboout 14-15 muffins. Line your muffin pan with papers to suffice.

In a bowl, combine 1 1/2 c flour, a teaspoon of cinnamon, a teaspoon of baking soda, 3/4 teaspoon of salt, and 1/8 teaspoon each of nutmeg, ginger and allspice.

And stir in 1/3 cup of old-fashioned or steel cut oats. Set it aside.

In your mixing bowl, combine 1 cup sugar, 2/3 cup pumpkin puree, 2 eggs and 1/2 cup of extra virgin olive oil.

Mix those well, and stir in 1/4 cup of orange juice.

Stir your flour mixture into the liquid mixture until combined.

Stir in 1/3 cup of dried sweetened cranberries and a half cup of rough-chopped pecans.

Scoop the batter into the muffin pan, filling the cups about 2/3 full.

Bake for 18-20 minutes or until they test done in the center with a toothpick. Remove to a cooling rack and cool to room temperature. Enjoy your muffins warm too if you like!
