I love making these sorts of Muffins. Unlike a cupcake, when it comes to muffins, you bake them and they are done! These particular muffins combine some of my favorite things…cake and NUTELLA!
To begin, line a standard muffin tin with papers, and preheat your oven to 325 degrees.
In your mixing bowl, mix together 2 eggs and 3/4 cup sugar.
To that, add 1 1/2 c flour, 1/4 teaspoon salt and 2 teaspoons baking powder.
Add in a half teaspoon of ground Nutmeg. Mix it together.
Don’t they look like brains? Ahem…
Add in a quarter cup of extra virgin olive oil (or vegetable oil)
And 3/4 cup of whole milk.
Finally, stir in a teaspoon of Hazelnut extract.
Scoop the batter into your muffin tin.
Now for the Nutella! Spoon a tablespoon or so onto the top of each muffin.
Stick a toothpick in the middle, and swirl it around.
Repeat with all of the muffins.
Bake them for 17-19 minutes, or until they test done in the center with a toothpick. Remove them to a rack and allow them to cool.
