A couple weeks ago we went berry-picking. I picked blueberries and raspberries this day.
But in addition to berries…I picked a pot full of fireweed blossoms.
The poor flowers!
I tossed the blossoms and kept the "tea" and added the pectin, sugar, and other things…
And a few minutes later, processed some jars.

And finally, I had 12 half-pints of fireweed jelly!

It is so fun to watch the lemon juice turn it purple after it turns brown. That is what we made last year for Christmas. This year I am gonna try rose hips hopefully….from our yard. They are in the freezer right now.
