Chicken Lollipops with Jerked Dipping Sauce

For the month of July, I have been bringing you a variety of dishes featuring Sweet Sunshine Sauces. I’ve brought you three main dishes and now today I’m bringing you a simple appetizer for your summer grilling season.

To begin, the foundation of your dipping sauce is Sweet Sunshine’s Jamaican Jerk sauce. Place a third cup of this in a small bowl.

To the sauce, add 1/4 cup of honey and a tablespoon of extra virgin olive oil.

Into the bowl, grate a clove of garlic, and zest a whole lime.

Juice the lime into the bowl as well.

Whisk these all together. Set this aside for the time being.

Heat your grill to 400 degrees.

Now for the chicken. Grab a 1 1/2 pound package of chicken tenders. Roll a tender around into a spiral, and stick a soaked bamboo skewer through it to hold it in place. If your tenders are too thick to roll, split them in half with a knife, making two from the tender. Repeat this with all of the tenders. Lightly brush all of the lollipops with oil and then sprinkle with salt & pepper. Place these on the grill and cook for 5 minutes on each side or until they are cooked through. In the last minute of grilling, brush a little bit of the sauce over the chicken.

Serve these simple and tasty appetizers with the dipping sauce.

Chicken Lollipops with Jerked Dipping Sauce – tender bites of chicken, skewered, grilled and served with zesty dipping sauce.
Ingredients
  • ⅓ c Sweet Sunshine's Jamaican Jerk Sauce
  • ¼ c honey
  • 2 Tb extra virgin olive oil, divided
  • zest and juice of a whole lime
  • 1 clove garlic, grated
  • 1½ lb chicken tenders (raw chicken breast strips)
  • ½ tsp salt
  • ½ tsp black pepper
